Baked plums with apples and amaranth

Ingredients for 2 servings:

  • 4 plums, pitted and diced
  • 1 apple, pitted and diced
  • 2 tsp cinnamon powder
  • 2 pinches of ginger powder
  • 2 pinches of clove powder
  • 1 pinch of vanilla, ground
  • 1 handful of mixed seeds (sunflower seeds, pine nuts, pumpkin seeds, etc.)
  • 75 g amaranth
  • 1 shot of milk or cream
  • 2 eggs
  • ½ tsp lemon zest, grated
  • 2 tsp raw cane sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Place the fruit, spices, and seeds in a small casserole dish, mix, and bake in the oven at 175°C for 20 minutes. Rinse the amaranth in a fine sieve. Bring to a boil in about 1 liter of water, turn off the heat, and let it swell with the lid closed for about 15 minutes. Remove the fruit from the oven and mash it lightly with a fork, mix, and smooth it down. Whisk the eggs with the milk, lemon zest, sugar, and amaranth and pour this over the fruit. Return to the oven and bake for another 20 minutes until the crust is lightly browned. The casserole is delicious hot or cold and can be served with custard or ice cream, if desired.
