Ingredients for 4 servings:
- 1 chicken, 1 – 1.5 kg
- 3 handfuls of fresh herbs, parsley, basil, marjoram
- 2 tbsp olive oil
- 4 bay leaves
- 2 sprigs rosemary, fresh
- 150 g Parma ham or other raw ham
- 200 g butter
- 2 lemons, untreated
- Salt

This gets under your skin
Preheat the oven to 225 degrees. Wash the chicken, pat dry, and rub salt all over it inside and out. Finely chop the herbs and ham and knead them with the butter and lemon juice. Carefully loosen the skin of the chicken from the meat to create a tunnel. But be careful! Then pour the butter/herb mixture into the skin and massage it into the breast until it is evenly distributed under the skin. There is usually some butter left over, so make three cuts in the thighs down to the bone and massage in the rest of the butter. Cut the second lemon into eighths and stuff it into the chicken with the rosemary sprigs and bay leaves. Place the chicken on the baking tray. Drizzle the olive oil over the chicken. Roast in the oven for 1 hour. The herb butter and ham will flow through the meat onto the baking tray, and the flavor will stay in. AMAZING!! You can also cook baked potatoes on the same baking tray.
