Roast cutlets with mustard crust

Ingredients for 10 servings:

  • 2 kg cutlet meat, boned
  • salt and pepper
  • 3 tbsp oil
  • 8 slices of toast
  • 2 eggs
  • 3 tbsp coarse mustard

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Season the meat, add oil, and place the meat in a roasting pan. Roast in a preheated oven at 200°C for about 30 minutes. Remove the crust from the bread, crumble it, and mix it with the eggs and mustard. Spread the mustard-bread mixture over the meat. Continue roasting for about 30 minutes. Carve the roast. Serve with parsley sauce.
