Ingredients for 3 servings:

  • 400 g ham in one piece, as lean as possible
  • 3 eggs
  • 3 tbsp, heaped flour
  • some margarine

Cut the lean ham into 3-4 mm thick slices, never thinner, or have them sliced ​​at the supermarket counter. Trim any fat and tough spots from the ham as best you can. Do not remove the fat from the center, as this will cause the ham to fall apart. Therefore, it’s best to choose the leanest piece possible. Mix the eggs and flour with a little water. Keep adding a little water until a thick batter forms. The consistency should be such that when you place the ham in the batter and remove it again, the batter can still run off, but enough batter still adheres. If the batter is too runny, stir in a little more flour. Heat margarine in a pan. Dip the ham slices into the batter until they are completely covered. Immediately place them in the hot margarine and fry until golden brown on both sides. Serve with boiled potatoes and white asparagus. A little of the remaining cooking fat can be basted over the potatoes on the plate. This is my favorite family recipe.
