Ingredients for 5 servings:

  • 1 kg roast pork, preferably from the neck
  • 1 bunch of soup greens, use only 1-2 carrots
  • 2 small onions
  • 3 tbsp tomato paste
  • 1 clove(s) garlic
  • liter vegetable broth
  • Salt
  • pepper
  • some sambal oelek
  • Sauce thickener, dark
  • some oil (sunflower)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours

Season the roast pork with salt and pepper. Sear on all sides in sunflower oil. Add the roughly chopped vegetables, onions, and garlic over low heat and sear. Add the tomato paste and sear briefly. Then add vegetable stock until about half the roast is covered. Simmer the roast with the lid on for at least 1 1/2 hours, turning it several times. After 1 1/2 hours, remove the roast from the pot and puree the sauce with a hand blender. Thicken with a sauce thickener until the desired consistency is reached. Season to taste with salt, pepper, and a little sambal oelek. Tastes delicious with bread dumplings and red cabbage.
