Ingredients for 4 servings:

  • 1,000 g pork (back)
  • 35 g butter
  • 3 onions
  • salt and pepper
  • 6 potatoes, boiled
  • 6 tbsp cream
  • butter
  • 1 pinch of nutmeg
  • 3 tbsp breadcrumbs
  • 3 tbsp butter
  • Flour or cornstarch

Pork loin with a mashed potato coating

Prepare the pork loin like a rolled roast in a large glass casserole dish or roasting pan. Brown, add the onion and seasoning, and roast uncovered for 1 hour in the oven at 175-200 degrees Celsius. Meanwhile, boil the potatoes, mash them, and mash them with butter, cream, nutmeg, and salt. After the hour of roasting, spread the mashed potatoes in a thick layer over the roast, sprinkle with breadcrumbs, and drizzle with melted butter. Return to the oven for another 30 minutes and roast until golden brown and crispy. Thicken the meat juices with a little flour or cornstarch. Serve with a crisp salad.
