Roast pork with soy-sugar marinade and thyme potatoes à la Isabelle

Ingredients for 6 servings:

  • 2 kg roast pork, with bone, without rind
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1 ½ kg potatoes
  • 1 bunch of thyme
  • 2 tbsp sea salt
  • 2 tbsp olive oil

Wash the pork roast and dry it with kitchen paper. Dissolve the sugar in the soy sauce. Brush the roast with it and let the marinade soak in for a few minutes. Preheat the oven to 210 degrees Celsius. Place the roast in a lightly greased casserole dish or grill pan and place it in the oven for 30 minutes. During this time, peel the potatoes and cut them into quarters. New potatoes can also be left in their skins and simply brushed thoroughly under running water. Then place them in a large freezer bag and add the olive oil, sea salt, and thyme. Tie a knot in the bag and mix the contents thoroughly. After 30 minutes, briefly remove the roast from the oven and arrange the potatoes around the roast. Place everything back in the oven and reduce the temperature to 180 degrees Celsius. After about 1 hour, the roast should be done and the potatoes should be soft and still slightly crunchy. Just test them every now and then. I got this recipe from a lovely landlady in Brittany during my last summer vacation, and I think it’s simple, sophisticated, and incredibly delicious. A dry French red wine goes perfectly with it, of course.
