Roast turkey in honey and bacon

Ingredients for 6 servings:

  • 1 kg turkey breast
  • 2 tbsp honey, liquid
  • 2 tsp oil
  • Salt
  • ½ tsp sambal oelek
  • 750 ml chicken broth
  • 100g bacon
  • 2 onions
  • 3 carrots
  • 4 thyme sprigs or 1 tsp dried

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

The bacon coating keeps the roast very juicy, sambal and honey add spice and flavor

Mix together the honey, oil, salt, and sambal and brush over the meat. Roast on a roasting pan in a preheated oven at 200°C for about 1 hour, gradually adding about 1/2 liter of stock. After 15 minutes of cooking, loosely cover the turkey breast with bacon. Arrange the finely sliced ​​onion and carrots around the meat and continue roasting. Sprinkle the thyme over the meat 10 minutes before the end of cooking. Remove the roast and keep warm. Strain the stock and roasted vegetables through a sieve, top up with the remaining stock to make 3/8 liter, bring to a boil, and season to taste. Serve the meat with the sauce and roasted potatoes.
