Roast wild boar wrapped in bacon

Ingredients for 4 servings:

  • 800 g wild boar (roast)
  • 200 g bacon cut into strips
  • 2 tbsp, heaped marjoram or rosemary
  • 1 tbsp salt and pepper
  • 20 ml olive oil
  • some fat for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes

Wash the wild boar roast and dry with kitchen paper. Heat the cooking fat in a pan and sear the roast on all sides for a maximum of 2 minutes per side. Remove the roast from the pan and rub with marjoram or rosemary. Then wrap it in bacon, secure it with toothpicks, and place it on a roasting tray. Now drizzle the olive oil, salt, and pepper over the wrapped roast and place everything in the oven preheated to 100°C (212°F) for 90 minutes. After 90 minutes, check the internal temperature of the roast; it should be 55-60°C (pink), 60-65°C (done). Cut the roast into 8 slices and serve with French fries, potatoes, dumplings, or croquettes.
