Roasted Almonds Variant 1

- 200 g Sugar
- 1 Pck. Vanilla sugar
- 1 tbsp Cinammon
- 200 g Unpeeled almonds
- 100 ml Water
- Line a baking sheet with parchment paper.
- Bring the sugar, vanilla sugar, cinnamon and water to a boil in a non-stick pan. Add the almonds and continue to cook, stirring constantly. When the sugar begins to dry out, reduce the heat and continue stirring until the sugar caramelizes.
- When the almonds are golden brown in the brittle, place the mixture on the baking sheet and separate the almonds with two spoons.
- The almonds are very hot, even if it is difficult to let them cool completely first.
