Ingredients for 1 servings:
- 300 g asparagus, fresh
- 30 g butter
- 2 tbsp Parmesan, freshly grated
- 1 egg(s) , or 2 pieces
- salt and pepper
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Wash and peel the asparagus, and cook for about 15 minutes (depending on the thickness of the stalks). Melt the butter in a pan. Add the drained asparagus and grated Parmesan cheese. Fry everything for a few minutes, turning frequently. Season with a little salt and pepper, then transfer to a plate. Fry the eggs in the remaining fat and then arrange them on top of the asparagus. TIP: You can also cut the asparagus into pieces, which makes it easier to handle when frying.
