Ingredients for 4 servings:

  • 500 g vegetables (mixed vegetables)
  • 250 ml vegetable stock
  • 500g mozzarella
  • 4 eggs
  • 125 g cheese (Emmental), grated
  • marjoram
  • Parsley
  • dill
  • tarragon
  • salt and pepper
  • nutmeg
  • Cayenne pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the vegetables into small cubes and cook in the vegetable broth until al dente. Drain the vegetables well in a bowl and fold in the mozzarella, crushed with a fork. Mix in the beaten eggs, spices, herbs, and breadcrumbs for binding. Stir in the grated Emmental cheese and season to taste. Form patties. Fry in hot oil in a pan until golden brown on both sides. Serve with herbed rice.
