better than the Christmas market

Lightly toast the nut mixture and almonds in a pan without fat, stirring constantly. Add the butter and stir. Sprinkle the gingerbread spice and cinnamon evenly over the mixture and continue stirring. Sprinkle the sugar over the mixture and stir constantly over low to medium heat until the sugar has melted and all the nuts and almonds are evenly coated with the liquid sugar. Spread it out on a large board lined with aluminum foil. Use two forks to separate the nuts and let them cool. If the nuts are still slightly stuck together after cooling, you can carefully break them apart now. Toasting the nuts gives them a much more intense flavor.
