Roasted green asparagus with Parmesan and Parma ham

Ingredients for 2 servings:

  • 500 g asparagus, green
  • 20 g Parmesan
  • 30 g butter
  • 4 slices of Parma ham
  • Salt and pepper, black from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the bottom third of the asparagus spears with a vegetable peeler and trim about 1-2 cm from the bottom with a knife. Bring salted water to a boil in a pot and cook the asparagus for 2-3 minutes until al dente. Drain and rinse the asparagus with cold water. Then pat dry between two layers of kitchen paper or dish towels. Finely grate the Parmesan cheese. Shortly before serving, heat butter in a pan and fry the asparagus for 3-4 minutes until golden brown on all sides. Sprinkle the grated Parmesan cheese over the asparagus, sprinkle with freshly ground black pepper, and toss briefly. Divide the asparagus between two plates, place two slices of Parma ham on each, and serve immediately. Wine recommendation: an Italian champagne: Franciacorta.
