Roasted nuts with a subtle curry note

Ingredients for 1 servings:

  • 100 ml water
  • 125 g sugar, preferably brown
  • 1 vanilla pod(s)
  • ½ tsp curry powder
  • 200 g nuts, of your choice

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Bring the water to a boil with the scraped vanilla pod, sugar, and curry powder. Then add the nuts and cook until the liquid has evaporated and the sugar has coated the nuts with a fine crust. Transfer the hot nuts to baking paper and let cool. Once cooled, store in airtight containers or jars. I made them with cashews and almonds—it’s addictive!
