Roasted Onion and Veal Liver Slices with Celery and Potato Mash and ….

Ingredients
 

Fried onion:

  • 100 g 1 Onion
  • 1 tsp Flour
  • 1 tsp Sweet paprika
  • 1 tsp Sugar
  • 1 tbsp Sunflower oil
  • 1 tbsp Butter

Veal liver sliced:

  • 240 g Veal liver
  • 1 tbsp Flour
  • 2 tbsp Sunflower oil
  • 3 big pinches Coarse sea salt from the mill
  • 3 big pinches Colorful pepper from the mill

Celery and potato mash:

  • 250 g Celeriac lozenges TK / Own production
  • 250 g Potatoes (triplets)
  • 1 tsp Salt
  • 1 tsp Ground turmeric
  • 1 tbsp Butter
  • 1 tbsp Cream
  • 3 big pinches Coarse sea salt from the mill
  • 3 big pinches Colorful pepper from the mill
  • 1 big pinch Nutmeg

Green beans with sugar snap peas:

  • 100 g Green beans
  • 100 g Snow peas
  • 1 tsp Salt
  • 1 tbsp Butter
  • 3 big pinches Coarse sea salt from the mill
  • 3 big pinches Colorful pepper from the mill

Serve:

  • 2 Stalk Parsley for garnish

Instructions
 

Fried onion:

  • Peel the onion, cut in half and cut into fine slices. Assemble the slices and mix with the flour (1 teaspoon), sweet paprika (1 teaspoon) and sugar (1 teaspoon). Heat sunflower oil (1 tbsp) and butter (1 tbsp) in a pan, add the prepared onions, fry / stir-fry until golden brown and take out again.

Veal liver sliced:

  • Clean the veal liver, cut into strips and turn them in flour (1 tbsp). Heat sunflower oil (2 tbsp) in the pan, add the floured liver strips and fry / stir fry vigorously. Season with coarse sea salt from the mill (3 big pinches) and colored pepper from the mill (3 big pinches). Add the roasted onion rings and sauté / stir-fry briefly. Put everything in an ovenproof dish and cover with aluminum foil and keep warm in the oven at 50 ° C until serving

Celery and potato mash:

  • Peel, wash and dice the potatoes and cook with the celery lozenges in salted water (1 teaspoon salt) with turmeric ground (1 teaspoon) for about 20 minutes. Drain, return to the hot saucepan and add butter (1 tbsp), cream (1 tbsp), coarse sea salt from the mill (3 big pinches), colored pepper from the mill (3 big pinches) and nutmeg (1 big pinch) Work through / pound the potato masher well.

Green beans with sugar snap peas:

  • Clean / unthread and wash the princess beans and snow peas. Boil the princess beans in salted water (1 teaspoon salt) for about 8 minutes. Add the snow peas in the last 2 minutes of the cooking time. Drain through a kitchen sieve, rinse with cold water, drain well and toss in the frying pan with butter (1 tbsp). Season with coarse sea salt from the mill (3 big pinches) and colored pepper from the mill (3 big pinches).

Serve:

  • Serve fried onion and veal liver slices with celery and potato mash and princess beans with snow peas, garnished with parsley.
