Roasted radicchio with pine nuts

Ingredients for 2 servings:

  • 1 head of radicchio
  • 2 tbsp pine nuts, lightly roasted
  • 1 tbsp oil
  • salt and pepper

Instructions

Working time approx. 8 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 13 minutes

Trim the radicchio, cut it into larger pieces, and fry it in oil with the pine nuts on both sides. Season the vegetables lightly if desired and serve fresh. One serving contains 92 calories per serving.
