Roasted semolina soup

Ingredients for 4 servings:

  • 4 tbsp semolina (durum wheat semolina)
  • 1 tbsp margarine or butter
  • 1 ½ liters meat broth, warm
  • 1 onion(s), finely diced
  • Salt
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat the margarine or butter in a saucepan. Sauté the finely diced onion. Add the semolina and stir until browned. It takes a while to brown, but then it cooks quickly, so be careful not to let the semolina turn black! Once browned, add the warm meat broth (hot water and stock cubes are also possible) and simmer uncovered for about 20-30 minutes over low heat. Season with salt and pepper to taste. Serve hot.
