Rolled apple pancakes with pear compote

Ingredients for 5 servings:

  • 200 g Flour, instant, type 405
  • 400 ml mineral water
  • 2 m.-sized eggs
  • 2 m.-large apples, sour
  • 20 g mango(s), dried
  • 1 tbsp sugar, brown
  • 1 pinch of salt
  • Fat, for the pan
  • 360 g compote (pear, ready-made product in a jar)

dairy-free, only with flour, mineral water and eggs

In a mixing bowl, mix the flour with the mineral water. Then add the eggs and mix. Add the sugar and salt to the bowl. Cut the mangoes into small cubes and add them to the bowl. Peel, core, and dice the apples into small cubes, then add them to the bowl and stir well. Heat the oil in a 20cm frying pan over medium heat. Add the batter with apple pieces to the pan a spoonful at a time and cook 5 pancakes one after the other. Let the finished pancakes cool slightly, then roll them up and cut them into diagonally sliced ​​pieces of dough about 2cm wide. Arrange them attractively on a plate, serve with the pear compote, and enjoy.
