Rolled Pizza with Spinach Filling and Chorizo

The spinach filling

  • 500 g Fresh spinach leaves
  • 3 tablespoon Olive oil
  • 5 piece Garlic cloves
  • 150 g Processed cheese double cream setting
  • 150 g Pepper and salt
  • 150 g Chilli fresh or from the mill
  • 5 tablespoon Freshly squeezed lemon juice
  • 200 g Grated Gouda
  • 200 g Chorizo

for the dip

  • 0,5 piece Cucumber
  • 100 g Greek yogurt 10% fat
  • 5 tablespoon Quark fat level 40%
  • 5 tablespoon Pepper and salt from the mill
  • 3 tablespoon Lemon juice

  1. The day before I had pizza and I had made a little more dough than I needed. You can find the link to my pizza day here in my KB = dough “basic dough” for quark oil dough. I have the pizza flour in different types and this time I used what can be seen in the pictures. I rolled out this dough (quite thin) and then placed it on a well-floured baking sheet. Covered in the oven to later use it cut into strips. This dish can also be made with a ready-made dough from the cooling FIX.
  2. Pre-cook the spinach with olive oil and garlic in a pan. Then mix the processed cheese with pepper and salt, a little chili and lemon. The processed cheese serves to thicken the spinach slightly so that any remaining liquid is bound. Now take the sheet with the dough out of the oven and preheat the oven to 230 degrees top / bottom heat.
  3. Cut the pizza dough into slightly wider strips on the baking sheet and distribute the grated cheese. Then spread the pre-cooked spinach generously on the tray. Now roll up the portions and then place them back on a clean baking sheet. Put in the oven for 15 minutes.
  4. When the time is up, raise the temperature in the oven to 250 degrees. Sprinkle the pizza rolls again generously with grated cheese and add the sliced ​​chorizzo. Bake for 10 minutes.
  5. I served the pizza rolls with a FIXed cucumber dip. For this, half a cucumber is cut into strips, mixed with yogurt and quark and seasoned with lemon, pepper and salt. – FINISHED !!!
