Pizza Wreath with Spinach Filling

The perfect pizza wreath with spinach filling recipe with a picture and simple step-by-step instructions.

Ingredients for the dough

  • 450 g Spelled flour type 1050
  • 1 tbsp Hemp flour
  • 1 tbsp Sea salt fine
  • 1 tsp Cane sugar
  • 1 packet Dry yeast
  • 0,5 tsp Bread spice or coriander
  • 3 tbsp Olive oil
  • 280 ml Lukewarm water

For the filling

  • 2 tbsp Coconut oil or olive oil
  • 2 chopped Onions
  • 2 chopped Garlic
  • 600 g Drained spinach
  • 1 tsp Homemade vegetable broth
  • 1 tsp Homemade herbal salt
  • 1 pinch Cayenne pepper
  • Coriander to taste
  • 150 g Sheep cheese
  • 2 handful Chopped walnuts

Preparation of the dough

  1. Put all the dry ingredients in a bowl, mix them with a whisk and only then add the oil and water and work them into a dough. My food processor does that for me. Let rise in a warm place for about 30 minutes.

The filling

  1. Sauté the onions in the olive oil, add the spinach and stir into a mass. If it is too thin, thicken it with a little locust bean gum, put this mass aside and let it cool down a bit.
  2. Now knead the dough, possibly add a little flour and roll it out on a floured baking sheet 30 x 50, distribute the filling evenly on it, spread the sheep’s cheese on top and sprinkle with the finely chopped walnuts, then roll up the dough and place in a mold. Cut into the dough, brush with olive oil and bake at 190 degrees for about 25-30 minutes.
