Rolls made from linseed flour and almond flour

Ingredients for 10 servings:

  • 300 g low-fat curd cheese
  • 100 g almond flour
  • 100 g flaxseed flour
  • 6 eggs
  • 2 tsp guar gum
  • 1 sachet of baking powder
  • 1 tsp salt
  • 1 tbsp butter

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 5 minutes

Low Carb Per Roll: 130 kcal, 13 g protein, 2.5 g carbohydrates, 6.6 g fat

Preheat oven to 180°C. Mix the low-fat quark and eggs with a hand mixer on high for 30 seconds. Add the almond flour, flaxseed flour, guar gum, baking powder, a pinch of salt, and a little butter, and mix for another minute. Let the roll dough rest for five minutes, then shape into ten equal-sized balls. Bake in the preheated oven for 20 to 25 minutes. Tip: Guar gum binds the dough when using gluten-free flours such as flaxseed flour and almond flour. It’s best to shape the roll dough with wet hands so the dough doesn’t stick to your hands.
