Romaine nectarine salad with colorful tomatoes

Ingredients for 4 servings:

  • 3 romaine lettuce hearts
  • 300 g tomatoes, colorful
  • 3 nectarines
  • 1 handful of basil leaves
  • 150 g goat’s cheese
  • 100 g ham, air-dried e.g. Parma or Serrano ham
  • 10 tbsp olive oil
  • 4 tbsp balsamic vinegar, lighter
  • 2 tsp mustard, medium hot
  • 2 tsp honey
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with goat’s cheese and air-dried ham

Mix together a dressing from oil, vinegar, mustard, honey, and spices. Cut the washed lettuce into strips. Halve the tomatoes. Cut the nectarines into thin wedges. Arrange the lettuce first, then the tomatoes, nectarines, and basil on plates. Top with the shredded ham and 3-4 small goat cheese dumplings (shape them with two moist teaspoons), and drizzle with the dressing. We served it with grilled salmon with a lemon, dill, cream, and mustard sauce.
