Ingredients for 1 servings:
- 350 g sugar
- 300 ml oil
- 6 eggs
- 420 g flour
- 3 tsp baking powder
- 2 tsp baking soda
- 1 pinch of salt
- 2 tsp cinnamon
- 2 packets of vanilla sugar
- 520 g carrot(s) (roots), grated
- 50 g almond(s), chopped
- 400 g marzipan
- 50 g powdered sugar

Great themed cakes – e.g. for birthdays, club parties, confirmations, etc.
Separate the eggs and beat the egg whites until stiff. Add the sugar and cooking oil. Then stir in the remaining ingredients, such as sugar, oil, flour, baking powder, baking soda, salt, cinnamon, vanilla sugar, ground roots, and chopped almonds. Spread the dough onto a baking sheet lined with baking paper. Bake in a preheated oven at 165°C – 175°C for approx. 40-50 minutes. Now mix the marzipan with the powdered sugar and roll it out. I always roll out the mixture on a piece of baking paper because it’s easier to place on the cake. When the cake is done, let it cool and place it on a baking sheet. Place the marzipan sheet on top, and you’re done. Tip: This cake is great for imaginative decorations. For example, you can color the marzipan with your choice of food coloring or decorate it with edible markers. You can also cut any shape out of the cake.
