Roquefort Omelette

Ingredients for 3 servings:

  • 8 eggs
  • 100 g blue cheese (Roquefort)
  • 20 g butter, soft
  • 125 ml hollandaise sauce
  • salt and pepper
  • Butter for frying

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the eight eggs in a little butter to make a large omelet and fill it with a cream made from 50g of Roquefort cheese and the butter. Then, fold the omelet together, place it on a preheated ovenproof dish, pour over the Dutch oven sauce, sprinkle with the remaining crumbled Roquefort cheese, and grill until golden brown. Serve as a warm appetizer.
