Ingredients for 4 servings:

  • 150 g cheese (Roquefort)
  • 100 g ricotta
  • 1 small pear(s), ripe
  • 1 tbsp lemon juice
  • 2 tbsp breadcrumbs
  • 100 g walnuts
  • Radicchio

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 20 minutes

Dice the Roquefort and place it in a bowl with the ricotta. Wash, peel, quarter, and core the pear. Finely dice the pear quarters, toss with a little lemon juice, and add to the bowl with the breadcrumbs. Mix everything thoroughly and refrigerate overnight. Roast the walnuts in a dry pan. Then finely chop in a blender or with a large knife. Form the well-chilled cheese mixture into small balls and roll them in the chopped walnuts. Serve the balls on radicchio leaves, if desired.
