Ingredients for 1 servings:
- 1 cake base (sponge cake), ready-made or homemade
- 300 g low-fat quark, more or less, possibly yogurt
- 1 cup whipped cream, approx.
- 1 pkt. Gelatin Fix
- Passion fruit syrup OR:
- Jam, possibly diluted with lemon juice
- 1 lemon(s), the juice
- 1 cup(s) cranberries OR:
- 1 cup(s) compote, (cherry compote), ready-made product, possibly jam
- some sweetener, liquid
- some powdered sugar for dusting
- 1 tbsp vanilla sugar

ideal for using leftovers – there are no limits to your imagination
For the filling, mix the quark (and yogurt, if desired), the juice of half a lemon, a little liquid sweetener or sugar, vanilla sugar, and syrup until creamy. Whip the cream until stiff peaks form. Stir the gelatine fix into the quark cream according to the instructions, then fold in the whipped cream. Cut the cake layer in half horizontally once. Mix the cranberries and cherry compote (or tart jam, perhaps combined with fruit) with the juice of the remaining half a lemon until smooth and spread on the bottom cake layer. Pour the cream on top and smooth it down. Place the top layer on top and dust with powdered sugar. Decorate as desired. Of course, the cake can be covered all over with cream and decorated in a variety of ways—everyone can do it their own way. But a few chocolate decorations will also suffice. Note: Adjust the amount of gelatine fix to the total amount of cream! If you like, you can stir the appropriate liqueur into the fruit spread.
