Ingredients for 1 servings:

  • 1 sprig(s) rosemary
  • 3 cloves garlic, or more
  • 1 piece(s) of chili pepper(s), dried or more
  • 5 grains of allspice
  • 250 ml olive oil

Instructions

Working time approx. 5 minutes; Rest period approx. 12 days 16 hours; Total time approx. 12 days 16 hours 5 minutes

Combine the first four ingredients in a sufficiently large bottle (or container with a screw lid) and pour in the oil. If you don’t want to use virgin olive oil, use refined yellow olive oil. Be careful not to use garlic that’s too fresh, or blanch it in milk for a few minutes beforehand, as otherwise the oil may ferment. Close the bottle and let it steep for at least three weeks. Do not refrigerate too cold.
