Rouille
The perfect rouille recipe with a picture and simple step-by-step instructions.
- 1 Red Bell pepper
- 1 tbsp Olive oil
- 150 g Waxy potatoes
- 2 Red Chili peppers
- 3 Garlic cloves
- 250 g Mayonnaise
- Salt
- Peel and halve the pepper and cut into small cubes.
- Peel the potatoes, cut into cubes and cook in salted water.
- Drain and allow to cool.
- Heat the oil in a pan and fry the diced peppers for 3 minutes.
- Halve the chili peppers, remove the stones and roughly cut into pieces.
- Peel the garlic.
- Puree the bell peppers, chillies, salt and garlic in a blender.
- Press the potatoes through the press.
- Stir the puree and the pressed potatoes into the mayonnaise.
- Season again to taste and serve with grilled meat or fish.
