Rouille

The perfect rouille recipe with a picture and simple step-by-step instructions.

  • 1 Red Bell pepper
  • 1 tbsp Olive oil
  • 150 g Waxy potatoes
  • 2 Red Chili peppers
  • 3 Garlic cloves
  • 250 g Mayonnaise
  • Salt
  1. Peel and halve the pepper and cut into small cubes.
  2. Peel the potatoes, cut into cubes and cook in salted water.
  3. Drain and allow to cool.
  4. Heat the oil in a pan and fry the diced peppers for 3 minutes.
  5. Halve the chili peppers, remove the stones and roughly cut into pieces.
  6. Peel the garlic.
  7. Puree the bell peppers, chillies, salt and garlic in a blender.
  8. Press the potatoes through the press.
  9. Stir the puree and the pressed potatoes into the mayonnaise.
  10. Season again to taste and serve with grilled meat or fish.
