Ingredients for 1 servings:
- 250 g butter
- 250 g sugar
- 1 packet of vanilla sugar
- 1 pinch of salt
- 4 eggs
- 2 tbsp rum
- 250 g flour
- 2 tsp baking powder
- 2 tsp, heaped cocoa powder
- 1 tsp cinnamon powder
- some apples, e.g. Boskoop, about 4 – 6 apples
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 45 minutes
from a 26 cm springform pan, approx. 12 pieces
Mix the butter, sugar, vanilla sugar, and salt thoroughly with a hand mixer until a whitish mixture forms. Then beat in each egg for about half a minute. Then add the rum and mix in. Sift the flour, baking powder, and cocoa powder and mix with the cinnamon. Pour the flour mixture into the butter and egg mixture, first carefully folding it in and then mixing well with a hand mixer. Peel the apples, dice them, and fold them into the batter. Grease a 26 cm springform pan and pour in the batter. Preheat the oven to 175°C (top/bottom heat) and bake the cake for 60-75 minutes. Dust the cooled cake with powdered sugar and cut into about 12 slices. The apple cubes keep the cake nice and fresh.
