Russian carrot salad with walnuts

Ingredients for 8 servings:

  • 1 kg carrot(s)
  • 1 jar salad cream (Miracle Whip Balance)
  • 3 garlic cloves
  • 1 handful of walnuts, chopped (small pieces are fine)

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Peel the carrots and grate them into fine sticks in a food processor (grating by hand will obviously take a little longer). Then place them in a salad bowl. Grind the walnuts; a mortar and pestle or a rolling pin is recommended. Once chopped, add the walnuts to the carrots. Peel the garlic cloves, finely crush them, and add them to the remaining ingredients. Add the salad cream to the bowl and mix everything together. Refrigerate for about 1 hour so the salad can develop its flavor. It’s perfect for grilling.
