Ingredients for 6 servings:

  • 4 large carrots
  • 4 large potatoes for salad
  • 1 cup peas, cooked
  • Parsley, chopped
  • Salt
  • ½ kg carrot(s)
  • 1 lemon(s), the juice
  • 4 cloves garlic
  • 2 tbsp olive oil
  • Salt, to taste

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Spanish tapas salad

Mayonnaise: Cook the carrots and remove them from the water. Set the cooking water aside. Puree the carrots with the remaining ingredients and add the cooking water to the desired consistency. Salad: Cut the cooked carrots and potatoes into small cubes. Mix them with the mayonnaise and season with salt. Let the salad sit for at least an hour.
