Rustic matjes and bean salad

Ingredients for 4 servings:

  • 8 herring fillets, ready to cook
  • 250 g green beans
  • 250 g potatoes, waxy
  • ½ bunch of spring onions
  • 4 tbsp red wine vinegar
  • 4 tbsp rapeseed oil
  • Salt
  • ½ tsp white pepper
  • 100 g smoked bacon, diced

Instructions

Working time approx. 30 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 25 minutes; Total time approx. 4 hours 55 minutes

A beer is a must

Trim the beans, cut into bite-sized pieces, and boil in heavily salted water for 5 minutes. Then let them cool in the salted water. Boil the potatoes in their jacket potatoes and let them cool. Peel and cut into small cubes. Finely slice the spring onions. Place the beans, potatoes, and onions in a bowl. Mix together the red wine vinegar, rapeseed oil, 1/2 teaspoon salt, and pepper, and pour over the beans. Let everything stand for about 3-4 hours. Before serving, fry the smoked bacon cubes until crispy and remove any excess fat from them on kitchen paper. Cut the herring fillets into 2cm-wide strips. Add both to the beans, potatoes, and onion mixture and mix well. Serve with hearty farmhouse bread and, be sure to drink a cold, fresh beer!
