Ingredients for 4 servings:
- 300 g brown rice, mixed with wild rice
- 600 ml vegetable stock
- 2 cloves garlic
- 175 g lean bacon
- 500 g mushrooms (e.g. chanterelles)
- spring onion(s)
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Brown the bacon and crushed garlic in a pan. Then add the mushrooms and cook. Cook the rice in the vegetable broth, then add it to the pan with the mushrooms and mix everything well. Finally, add the chopped spring onions and mix well again, but do not cook any longer, as otherwise the onions will become too mushy.
