Rustic wholemeal spelt flatbread with chia

Ingredients for 1 servings:

  • 150 g wholemeal spelt flour
  • 125 g natural yogurt, low-fat
  • 1 egg(s)
  • 1 tsp honey
  • 1 tsp baking powder
  • 1 tsp chia seeds, for the dough
  • some chia seeds for sprinkling
  • some salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Fast, filling and healthy

Briefly roast the chia seeds in a pan without any fat; the seeds will then taste slightly nutty. Mix the flour with the baking powder, roasted chia seeds, and salt. Stir in the egg, honey, and yogurt. This will produce a soft, sticky dough. Spread this dough onto a baking sheet lined with baking paper, about 20 cm in diameter, brush with a little water, and sprinkle on some chia seeds, or optionally black cumin and/or sesame seeds. Bake in a preheated oven at 200 degrees (top/bottom heat) for about 20 minutes. This flatbread is perfect for filling with gyros, feta, and coleslaw, but it also tastes delicious as a side dish for a barbecue or with a salad.
