Rustic Wild Garlic Tart

shortcrust

  • 200 g Flour
  • 80 Butter
  • 1 Egg
  • 0,5 tsp Espelette pepper
  • 1 pinch Salt

Casting and covering

  • 4 Red Onions
  • 100 g Bacon cubes
  • 100 ml Cream
  • 1 bunch Wild garlic
  • 1 Clove of garlic
  • 2 Eggs
  • 150 g Grated mountain cheese
  • Black pepper from the mill
  • Salt

  1. Put the flour in a bowl with the salt and the Espelette pepper. Add the egg and distribute the butter in small flakes around the edge. Now work everything into a smooth dough with your hands, wrap it in cling film and let it rest in the refrigerator for about 1 hour.

Covering and casting

  1. Quarter the onions and cut into strips. Heat a pan, leave out the bacon cubes and then add the onions and sauté for a few minutes while turning and then leave to cool a little.
  2. Roughly cut the wild garlic and put it in a tall container together with the cream and garlic and puree everything finely. Whisk the two eggs well and add the wild garlic cream, mix very well and season with salt and pepper.

Assembly and finish

  1. Roll out the dough thinly with the rolling pin and fit it into the tart pan, cut off the excess edges. Prick the tart base several times with a fork and spread the onions on it, then pour the icing over it and finally spread the grated mountain cheese over it and then bake in the oven preheated to 180 degrees for about 35 – 40 minutes. Let rest for approx. 5 minutes before cutting.
