Ingredients for 1 servings:

  • 6 tbsp milk, lukewarm
  • 200 ml water, lukewarm
  • 1 cube of yeast (42 g)
  • 35 g brown sugar
  • 1 egg(s)
  • 200 g wheat flour type 550
  • 300 g rye flour type 1150
  • 8 g salt
  • 80 g butter, soft
  • 1 tbsp maple syrup
  • Flour for dusting

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 35 minutes

Burger Bun

Mix the water, milk, sugar, and yeast in a bowl and let it rise for 5 minutes. It is important that the water is no warmer than 36°C. Add all ingredients and the yeast mixture to the flour in a bowl and knead the dough for at least 10 minutes until glossy. Let it rise for 1 hour. Form the dough into buns, loop them, and dust with flour. Place on a baking sheet lined with baking paper and let rise for another hour. Preheat the oven to 200°C fan/convection oven and bake the buns for about 15 minutes. Makes 12 buns.
