Ingredients for 3 servings:

  • 100 g smoked bacon, diced
  • 3 eggs
  • 3 tbsp flour
  • some milk
  • Salt
  • nutmeg

Instructions

Working time approx. 3 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 8 minutes

simple, quick, hearty Saarland dish

Fry the bacon cubes in a frying pan. Whisk the eggs, flour, salt, and nutmeg with a little milk and pour over the bacon. Bring to a boil (it should set slightly, not remain liquid!) and serve hot. Serve with farmhouse or wholemeal bread. Serving suggestion: Serve the “Eierschmeer” on bread and serve with a leaf salad. At home, it’s a warm, hearty dinner/snack.
