Sabich – Israeli eggplant sandwich

Ingredients for 2 servings:

  • 2 flatbreads (kebab bread)
  • 1 eggplant(s)
  • 1 egg(s)
  • 1 large tomato(s)
  • 2 tbsp tahini
  • 2 tbsp hummus
  • 2 tbsp natural yogurt or cream cheese
  • Cumin powder
  • Parsley
  • some oil for frying

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 10 minutes

Bake the kebab breads in the oven according to the package instructions. Meanwhile, slice the eggplant and fry in a pan with a little oil for about 5 minutes. Hard-boil the egg. Slice the tomato and egg. Now cut the kebab breads open and spread with hummus and tahini. Arrange the eggplant slices on top. Arrange the tomato slices and egg slices on top. Drizzle the yogurt or cream cheese into the bread and season with parsley and cumin. Sabich is eaten from the hand like a doner kebab or burger.
