Ingredients for 4 servings:
- 350 g rice (wild rice)
- 400 g chicken breasts
- 500 ml broth
- 1 onion(s), red, chopped
- 150 g apricot(s), dried and soaked
- 100 ml olive oil
- 2 tsp mustard
- 2 tbsp honey
- Salt
- Cayenne pepper
- 1 lemon(s), the juice
Instructions
Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes
Cook wild rice in salted water for about 30 minutes. Let the chicken breasts simmer in the broth for about 20 minutes over low to medium heat, then cut into strips. Combine the wild rice, chicken strips, onions, and chopped apricots. Stir together the remaining ingredients and pour over the salad, toss to combine, and let rest for 2 hours.
