Rice salad with mandarins, peppers and ham

Ingredients for 4 servings:

  • 1 bag of rice, or 1 cup of whole grain rice or day-old rice
  • 1 red bell pepper(s)
  • 1 bell pepper(s), green
  • 1 spring onion(s) , or a small normal onion
  • 1 small can/mandarin orange(s)
  • 200 g Miracel Whip or sour cream
  • 2 tbsp soy sauce
  • e.g. salt and pepper
  • 150 g ham, diced, lean

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the rice according to the package directions or as usual in salted water. Meanwhile, wash, trim, and finely chop the bell peppers. Peel and finely chop the onion or finely chop the spring onion. Drain the can of mandarin oranges and reserve the juice. Mix the Miracle Whip or sour cream with the soy sauce to make the dressing. Then add the bell peppers, onion, diced ham, and mandarin oranges one after the other. Finally, add the cooked and cooled rice (or rice from the day before) and fold in. Season to taste with salt and pepper, if desired. If the salad is too dry, add a little more mandarin orange juice. Be careful with the salt, as the diced ham already adds a good amount of flavor.
