Ingredients for 4 servings:
- 700 g pork fillet(s)
- 3 tbsp sour cream
- 1 egg yolk
- 3 tsp mustard
- Thyme
- Salt
- Paprika powder
- 200 g breadcrumbs
- 4 tbsp clarified butter
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Rinse the pork fillet, pat dry, and season. Combine the sour cream, egg yolk, and mustard and season with salt, sugar, thyme, and paprika. Brush the pork fillet with this mixture and then roll it in the breadcrumbs. Sear the pork fillet on all sides in hot clarified butter and then roast at 180°C for 20-25 minutes.
