Sage – Bacon – Chicken

Ingredients for 4 servings:

  • 4 ports. Chicken breast fillet(s) (150 g each)
  • salt and pepper
  • 16 sage leaves
  • 8 slices of breakfast bacon
  • 3 tbsp olive oil
  • 1 small onion(s)
  • 40 ml white wine
  • 300 ml chicken stock
  • 100 g cream
  • 1 tbsp sauce thickener, light
  • 1 tbsp pesto, red

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Halve the chicken breasts lengthwise. Season with salt and pepper and garnish with sage leaves. Wrap a slice of bacon around each strip of chicken breast. Heat olive oil in a pan and fry the parcels on all sides for 4-5 minutes. Remove and keep warm. Peel and finely dice the onion. Brown in the remaining fat until light brown. Deglaze with white wine, chicken stock, and cream and bring to a boil. Thicken the sauce with a sauce thickener, season with pesto, salt, and pepper. Serve with the meat. 363 kcal, 41 g protein, 19 g fat, and 4 g carbohydrates.
