Salad dressing for all occasions

Ingredients for 4 servings:

  • 6 tbsp olive oil, cold-pressed, extra virgin
  • 1 tbsp balsamic vinegar, white
  • 2 tsp mustard, medium hot, or Dijon mustard
  • 1 tbsp lemon juice
  • 1 tbsp herbs (salad herbs), dried
  • 2 tbsp honey
  • 1 pinch(s) black pepper, freshly ground

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

goes well with mixed salads, lamb’s lettuce

Combine all ingredients in a tall, slim container and blend with a hand blender, or mix in a cup with a small whisk. I like to use this dressing with mixed salad (oak leaf lettuce, lollo rosso, radicchio, arugula, lamb’s lettuce, baby spinach, whatever’s available, plus tomatoes and cucumbers). It also goes perfectly with plain lamb’s lettuce with toasted white bread cubes and bacon bits.
