Ingredients for 1 servings:
- 1 portion of mixed leaf salad
- 1 tomato(s) , (Roma-)
- 2 cocktail tomatoes
- 1 goat’s cheese (coin)
- 2 leaves of radicchio
- some stalks of chives or parsley
- 2 tbsp honey
- some balsamic vinegar, white
- some olive oil
- 6 slices of mozzarella
- Sea salt, freshly ground
- Black pepper, freshly ground
- ½ dl water
- 2 tbsp dried fruits and nuts
- 8 slice(s) sweet potato(s), cut into chips
- some oil for frying
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Wonderfully fresh salad with goat cheese and honey
Peel the sweet potato and cut it into 8 thin, chip-like slices. Deep-fry the sweet potato slices in oil and set aside. Wash the lettuce. Make a dressing with 1 1/2 tablespoons of honey, balsamic vinegar, olive oil, and water. Toss the lettuce with the chopped trail mix and dried fruit and the dressing. Brown the goat cheese slice on both sides, brush one side with honey, and sauté briefly. Arrange the lettuce decoratively in the center of the plate. Arrange the quartered tomatoes on opposite sides of the plate. Cut the mozzarella into sticks and place them on the other corners. Place the fried goat cheese slice on the lettuce tower and decorate with the deep-fried sweet potato slices. Use the radicchio leaves for garnish.
