Finely chop the sun-dried tomatoes. Mix with the other ingredients and store in a clean screw-top jar. Directions: Mix 3 tablespoons of olive oil with 3 tablespoons of water and 10 g of the mixture (about 1 tablespoon). Add a dash of balsamic vinegar to taste. Let the dressing sit for about five minutes and then toss with your favorite salad. This quick dressing goes well with green leaf salads, Mediterranean pasta salad, or tomato salad.
