Salad with seasoned tofu

Ingredients for 1 servings:

  • 200g tofu
  • ¼ iceberg lettuce
  • ½ bell pepper(s)
  • 1 tomato(s)
  • ¼ cucumber(s)
  • 4 tbsp corn
  • 1 tsp lemon juice
  • 1 tsp mustard
  • oil
  • salt and pepper
  • Paprika powder
  • curry powder

Working time approx. 30 minutes; Total time approx. 30 minutes

Heavenly delicious and quick to prepare!

Wash and chop the lettuce, peppers, tomatoes, and cucumber, and place them in a salad bowl. Add the corn. Mix together a salad dressing of lemon juice, mustard, 2 tablespoons of corn stock (liquid from the corn can), salt, pepper, and 1 tablespoon of oil, and drizzle over the salad. Cut the tofu into approximately 1/2-cm-thick slices and toss in a mixture of 1/2 teaspoon salt, 1 teaspoon paprika, and 2 teaspoons curry powder. Fry in a pan with about 2 teaspoons of oil for about 2 minutes on each side. Then cut into cubes and add to the salad.
