Salad with smoked tofu

Ingredients for 2 servings:

  • 175 g smoked tofu
  • 6 gherkins, diced
  • 1 small onion(s), cut into fine rings
  • 10 cocktail tomatoes, halved
  • 1 clove(s) garlic, pressed through a press
  • 2 tbsp vinegar
  • 2 tbsp olive oil
  • some salt
  • ½ bunch parsley, finely chopped

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Tastes almost like a real sausage salad.

Dry the tofu with a kitchen towel and cut first into thin slices, then into fine strips. Place the strips in a bowl with the other ingredients. Mix everything well and season to taste. The salad tastes best when refrigerated for about an hour. Tip: Thin strips of bell pepper work just as well, as does the version with a hard-boiled egg.
