Salad with special dressing

Ingredients for 3 servings:

  • 0.3 head of endive lettuce
  • 2 small pak choi
  • 3 baby carrots (snack carrots)
  • 1 tbsp sunflower seeds
  • 1 tbsp Kadayif dough strands, toasted (optional)
  • 2 tbsp balsamic vinegar, light, or apple cider vinegar
  • 1 tbsp olive oil
  • salt and pepper
  • 2 tsp, leveled tahini (preferably not solid)
  • 1 dashes lemon juice
  • 2 tsp, spread pistachio cream, 45%, or puree
  • 2 tbsp water
  • ½ tsp maple syrup, maybe a little more

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

unusual but delicious

Wash and cut the lettuce and bok choy into strips. Wash and thinly slice the snack carrots. Combine everything in a bowl and prepare the dressing. To make the dressing, stir together all the dressing ingredients or mix them in a shaker. Add to the salad and mix thoroughly. Finally, sprinkle the sunflower seeds and kadayif on top. Note: Do not use overly sweet pistachio spreads containing milk powder or chocolate.
