Salad with white beans and figs

Ingredients for 2 servings:

  • 2 figs, fresh
  • 1 small can of white beans, approx. 200 g
  • 25 g pecans
  • 1 radicchio, alternatively a spicy salad mix
  • 1 small onion(s), red
  • 50 ml white wine vinegar
  • 1 tsp maple syrup
  • 1 tsp mustard, medium hot
  • 25 ml olive oil
  • 25 ml walnut oil
  • some salt
  • some pepper

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine all the dressing ingredients in a shaker. Finely slice the onion. Rinse the beans in a sieve, drain well, and toss in a bowl with the dressing and onion wedges. Wash the radicchio, drain well, and cut into bite-sized pieces. Halve the pecans. Wash the figs, pat dry, trim off the stems down to the flesh, and quarter or eighth the figs. Mix the beans and lettuce, divide among plates, arrange the figs on top, and scatter the pecans on top. Drizzle any remaining dressing in the bowl over the salad.
